I can’t find a saddle to fit my horses back?

I am looking at a barefoot atlanta saddle for my arabian. She has narrower withers, will it fit her?

Its an english saddle and my mare is in good condition - not over or underweight.
She was really sweaty last night after I rode her as it was a hot day and the sweat was pretty even. No obvious dry spots.

I have a new quarter horse mare with a super flat back. She is very chunky and I cant find a saddle to fit. ?

Why do they say its dangerous to ride with stirrups with a bareback pad?

Rarely my horse might rear and he always turns extremely sharp. I feel I NEED stirrups to hold on. I am top heavy and without them I feel like I will fall off in a second when we are turning or in a trot. I am scared out of my mind with out the security of a saddle.
